This is a VERY tasty, healthy, gluten-free, eggless meatloaf with protein AND fiber!
Ingredients
- 1 lb Ground Beef Grass-Fed, Organic
- 2 Tbsp Ground Flaxseed
- 4 Tbsp Water
- 1 Tbsp Chia seeds
- 1/4 Cup Applesauce Organic, No Sugar Added
- 1 tsp Dijon Mustard
- 1 tsp Worcestershire Sauce
- 1/4 tsp Salt
- 1/4 Onion (chopped)
- 2-4 Cloves Garlic (finely chopped)
- 1 Tbsp Oregano
Instructions
Wet Mixture:
- In a small bowl, add WATER and GROUND FLAXSEED. Beat vigorously with a fork until it thickens a bit.
- Stir DIJON MUSTARD and WORCESTERSHIRE SAUCE into the mixture.
- Add APPLESAUCE and CHIA SEEDS to the mixture. Stir vigorously. SET ASIDE.
Carry on:
- Preheat oven to 375°.
- Chop 1/4 of an ONION.
- Mince 2 – 4 cloves of GARLIC (to your liking).
- In a medium-size bowl, add GROUND BEEF, ONION, GARLIC, WET MIXTURE (that you have set aside), SALT and OREGANO. Stir/work it together until combined.
- Press mixture into average size loaf pan (we use 9 1/4″ x 5 1/4″ x 2 1/2″, but 8 1/2″ x 4 1/2″ x 2 1/2″ is fine). We use a glass one.
- Bake for 1 hour.
