Luscious Chocolate Oatmeal Cookies (flour-free)

Rich, moist and chocolatey!  This simple, healthy cookie recipe is a chocolate lover’s delight! 

Ingredients

Dry Ingredients

  • 1 cup *rolled oats gluten free
  • 3-4 Tbsp cocoa powder (use 4 for super chocolatey cookies) organic
  • 1 pinch salt

Wet Ingredients

  • 1/3 cup honey raw
  • 1/ 1/2 tsp vanilla extract
  • 1/4 cup coconut oil
  • 2 egg whites

Instructions

  1. Mix OATS, COCOA POWDER and SALT together in medium bowl.
  2. Heat COCONUT OIL on stove on low just until it liquifies, add HONEY and stir. 
  3. Pour COCONUT OIL and HONEY mixture into dry ingredients, and add VANILLA EXTRACT and EGG WHITES. Mix together thoroughly. 
  4. Chill mixture in refrigerator for an hour or more.
  5. Preheat oven to 350°.
  6. Line cookie sheet with parchment paper and place small mounds of batter (about 2 teaspoons each) on parchment paper, spaced apart a bit.
  7. Bake for 12 minutes.
  8. Allow cookies to cool. Enjoy! 

Recipe Notes

*Even if you buy rolled oats labeled “gluten free,” keep in mind that oats are gliadin cross-reactive and may bother some people who are gluten sensitive.
