Rich, moist and chocolatey! This simple, healthy cookie recipe is a chocolate lover’s delight!
Ingredients
Dry Ingredients
- 1 cup *rolled oats gluten free
- 3-4 Tbsp cocoa powder (use 4 for super chocolatey cookies) organic
- 1 pinch salt
Wet Ingredients
- 1/3 cup honey raw
- 1/ 1/2 tsp vanilla extract
- 1/4 cup coconut oil
- 2 egg whites
Instructions
- Mix OATS, COCOA POWDER and SALT together in medium bowl.
- Heat COCONUT OIL on stove on low just until it liquifies, add HONEY and stir.
- Pour COCONUT OIL and HONEY mixture into dry ingredients, and add VANILLA EXTRACT and EGG WHITES. Mix together thoroughly.
- Chill mixture in refrigerator for an hour or more.
- Preheat oven to 350°.
- Line cookie sheet with parchment paper and place small mounds of batter (about 2 teaspoons each) on parchment paper, spaced apart a bit.
- Bake for 12 minutes.
- Allow cookies to cool. Enjoy!
Recipe Notes
*Even if you buy rolled oats labeled “gluten free,” keep in mind that oats are gliadin cross-reactive and may bother some people who are gluten sensitive.
