Sadato’s Famous Hummus

Ingredients

  • 4 cups cooked chickpeas after soaking chickpeas overnight
  • 1 ½ cups organic tahini
  • 1/2 cup olive oil
  • 2 tbsp lemon juice
  • salt to taste
  • extra olive oil optional
  • pine nuts optional garnish

Instructions

  1. Soak chickpeas overnight.
  2. Pour out water and boil in fresh water for about an hour, or cook in pressure cooker for 12-20 minutes.
  3. In a strong blender or BPA-free food processor, cream in the tahini with olive oil and lemon juice.
  4. Salt to taste.
  5. Add the chickpeas very gradually – about 1/8 cup at a time, and blend until creamy.
  6. Serve in a bowl and add some extra olive oil. I like to add pine nuts as well. Picture shows pine nuts, basil and paprika.
