Ingredients
- 2 cups cashews (to make Cashew Cream) Begin preparation of cashew cream 3-4 days in advance. See Instructions, below.
- 1 package Tolerant Red Lentil Pasta
- 2-3 Tbsp avocado oil
- 1 onion
- 1 package Aidell’s Organic Chicken Sausage
- parsley

Instructions
- 3-4 days in advance of meal preparation: Soak 2 cups of cashews in just about enough water to cover them (1 inch) for 3-4 days. When through soaking, pour out soaking water. Add 2 fresh cups of water, and blend in blender until creamy.
- When ready to prepare meal: In medium-to-large pan, boil pasta per instructions on package.
- Chop onion, and sautée in avocado oil in large frying pan until caramelized (golden brown).
- Chop sausage into rounds and then add to onions in frying pan. Brown the sausage on both sides.
- Add cooked pasta to ingredients in frying pan, and stir together.
- Pour cashew mixture over ingredients in frying pan.
- Warm until parboiled, then keep warm about 20 minutes to allow the pasta to cook in the cashew mixture.
- Add freshly chopped parsley.
- *For those who like (and can tolerate) mushrooms, sautée mushrooms with the onions and chicken for a nice addition.
